Shrimp Curry! π€
I'm a hard core seafood fan.. and I miss seafood made by my mom. So I tried to recreate the Shrimp Curry she makes. It obviously wasn't as amazing as she makes, but definitely delicious.

Ingredients :
Medium sized peeled and deveined shrimp (20 in total)
2 medium tomatoes, diced
1 medium onion, diced
1 can coconut milk
Salt for taste
1/2 tsp turmeric
1 1/2 tbsp red chili powder
2 tbsp oil
2 tbsp oil

2-3 servings

15 minutes
Cook time :
20-30 minutes
Recipe :
- Marinating the Shrimp
1. In a bowl, put in the cleaned shrimp.
2. Add a pinch of salt and 1 tsp red chili powder.
3. Let the shrimp marinate till the curry is ready.
- Curry Recipe
1. In a large bowl heat up the oil and put in the onions. Fry till golden brown
2. Add tomatoes and let them cook for 1-2 minutes.
3. Add the remaining red chili powder, turmeric and salt. Let it cook for another 5 minutes till the mixture starts looking brownish.
4. Add the coconut milk.
5. When it just starts to boil, add the marinated shrimp.
6. Let the shrimp cook for 4-5 minutes. Shrimp cooks very fast, make sure you don't overcook it.
The shrimp should be a perfect C-shape. If it's all the way round, it is overcooked.
7. Serve hot with basmati rice ππ
