Ingredients :

Any good quality, crusty bread (I used rustic Artisan Bread)
Old Fort, Cheddar, Mozzarella, Monterey Jack (any combination)
Olive oil
Sea Salt
Freshly cracked pepper
Paprika/smoked paprika

Butter

Prep time :

10 minutes

Cook time :

10-15 minutes

Recipe :

1. Grate equal parts of Old fort, sharp cheddar and Monterey jack cheese. (For a variety in texture, I grate any 2 types and make thin slabs of the third one).
2. Layer the grated/cut cheese on the bread, add salt, pepper and a pinch of paprika for seasoning. (be mindful of the type of cheese you are using - some cheddars can be really salty.
Quick tip : Add a thin layer of Mayo to make your sandwich more creamy)
3. Top up with the other slice
4. Heat a non stick skillet on a medium low flame. Add 1/2 tbsp of butter and a some olive oil to prevent the butter from burning.
5. When the butter starts to bubble, place the sandwich in and press down on the upper slice with a flat spatula (or any weight for that matter). Cover the pan for 2-3 minutes. Check for the crust with a spatula and turn if the crust is hard and the bubbles on the side have slowed down. Repeat the same for the other side till the second side is golden brown and the cheese has melted completely.
6. Cut in half and serve! πŸ§€πŸ₯ͺ

  • For cheese crowns/walls (Optional) :

1. Add a 1 tsp of olive oil to the heated non stick pan and swirl around.
2. Add grated mozzarella and let it melt.
3. Fry the melted cheese on low heat till it forms a grid and the cheese hardens.
4.Place the melted cheese grid aside and repeat for 4 sides or whatever design/plating idea you have in mind. Stack up the cheese crown/walls on 4 sides of your sandwich.
