Easy homemade Eggplant Parmesan π₯
I thought of eating something healthy the other day, and was browsing through my fridge.
Saw an eggplant and thought .."Hmm, I could make something healthy out of this!"
But my dominant and unhealthy side took over and I ended up making Eggplant Parmesan π

Ingredients :
1 eggplant
2-3 cups of shredded mozzarella cheese (depending on how cheesy you want your dish to be)
1 cup of shredded Mexican cheese blend
Marinara sauce (enough to cover the eggplant pieces. I used 3/4th bottle of Ragu Marinara Sauce)
Salt
1/2 cup all purpose flour
1 egg, beaten
1 cup breadcrumbs

40- 45 minutes
Recipe :
1. Cut the eggplant into round pieces. The pieces should not be thicker than 1/4 inch.
Spread the pieces on a paper towel, sprinkle with some salt and let them sit for 1 hour.
This lets out all the bitter juices from the eggplant.
2. After 1 hour, remove all the excess water / juices from the eggplant and preheat the oven to 375 ℉.
3. Start breading the pieces, dipping them one by one in flour, egg and then breadcrumbs. Put them on a baking sheet, placed on a baking pan.
4. Once you are done breading all the eggplant pieces, bake them in the oven for 20 minutes at 375℉.
5. Take a baking dish which will fit all of your eggplant pieces.

- Start layering by putting the marinara sauce at the bottom.
- Add the baked eggplant pieces on top of the sauce.
- Add half of the mozzarella cheese and half of the Mexican cheese blend.
- Add a little bit more sauce on the top.
- Put the remaining eggplant pieces and top off with the remaining mozzarella and Mexican cheese blend. Drizzle a little salt for taste.
6. Bake for 20-25 minutes at 375℉.
7. Your cheesy homemade Eggplant Parmesan is ready. Serve hot π
